In addition to the usual black peppercorn, you can also obtain red, white, and green peppercorns. Although they are all made from the same plant, they are all prepared differently to give them distinct appearances and somewhat varied flavors. Dried green peppercorns are a more modern invention, although they are now widely available in Western nations. The classic varieties are black and white. While black and green peppercorns are more aromatic than white peppercorns, white pepper has the most pungency. Green pepper has the lowest. The scent of green peppercorn is grassy and rather immature. Red peppercorns blend the sophisticated pungency and flavor of black pepper with a sugary-sweet taste.
