Bay leaves have a bitter taste, a sweet, spicy scent, and a darker green color below. Among all food flavorings, fresh or dried leaves are among the most widely used. The ancient Greeks utilized bay leaves as seasoning. The bay leaf tree is an evergreen shrub that may grow up to 60 feet tall. It has olive-like, purple-black fruits with separate blooms for male and female flowers. Because of their superficial resemblance to genuine laurel, many unrelated plants are also referred to as “Bay” or “Laurel. The leaves are extremely light when they are first picked, and their full flavor doesn’t emerge for several weeks.
